There’s an old saying I agree with: “Good beef doesn’t need much seasoning.” You can’t say that about pork, chicken or fish…..or tofu (for you crazy vegetarians). I’ve tried my best to live those words when I am in control of the grill/oven/stove. Typically it means a simple marinade of balsamic vinaigrette, oil, salt and pepper; or a mushroom and wine sauce. Sometimes, a really good cut of beef needs nothing more than the kiss of flames from the grill.
Restaurants these days have a hard time properly flavoring steaks. They add way too much salt or smother it in a sauce that completely masks the beef flavor. And don’t get me started on A1 sauce – that stuff will never touch my steak. If you swear by A1 sauce, you can leave…now.
I always love finding a simple sauce or flavoring for steak that both compliments it and draws out the earthy, natural flavor.
Steak, meet bleu cheese.

All you need to put the cherry on top of a sirloin sundae, is a little Bleu Cheese Butter. Not only will the bleu cheese enhance the great beef flavor, but the ability to spread it yourself will enable you to control the strength of the flavor so it isn’t overpowering.

Blue Cheese Butter for Steaks
Ingredients: 1/2 cup blue cheese crumbles, 1/4 cup butter (softened), 1/4 cup toasted walnuts, 2 Tbsp. minced parsley, 1 Tbsp. minced rosemary.
Instructions: Combine all ingredients in a bowl and refrigerate until ready to use (at least 30 minutes)

I am obsessed with blue cheese butter and steaks! I had the combo for the first time at The Strip Club Meats & Fish over here in St. Paul and I was hooked. They are such a perfect match. I see the hasselback potatoes in the background which I also recently tried making and really like them.
